The flower

Pink stock, twenty stems as standard and forty in the deluxe. Stock is the most strongly scented flower in our regular range: a warm clove-and-honey perfume that carries across a room and gets stronger as the room warms. Each stem is a column of small ruffled florets that open from the bottom upward, so the spire keeps lengthening in the vase.

When it's at its best

Stock is a real California crop: January through May, with the peak from February to April. In those months the stems are local, thick and heavily scented. It is one of the few flowers where the seasonal difference is something you can smell.

Care

Stock has the worst reputation of any flower for fouling its water; the thick stems break down fast and the smell will tell you before the flowers do. Strip every leaf below the waterline, change the water daily rather than every other day, and rinse the stem ends when you do. Recut an inch each time. Four to five inches of water, a cool room, and expect five to eight days.
