Below it you are buying flowers. Above it you are buying an object with a footprint, and the difference is not simply more stems in the same shape.
Three things change at once. The vessel starts to matter, because at this scale the container is structural rather than decorative and it becomes a real share of the cost. The stem grade goes up, which sounds like sales talk and is not: a longer, thicker rose from a higher grade costs a multiple of a standard one, and it is the only way to get a head that opens to full size without the neck folding. And the labour changes, because a large arrangement is built in the studio on an armature, one section at a time, and cannot be assembled in the hand the way a wrapped bouquet is.
The practical consequence is weight and surface area. These pieces need somewhere to live. A console table, a reception counter, a dining table that is not going to be used for dinner. They are not something a person carries out to a car. If the recipient is sitting in a shared office or a hospital room, this is the wrong page and $110 to $190 is the right one.
Where the size earns its money
Entrances and front desks, where one arrangement does the work of the whole room. Milestone anniversaries, where the scale is itself the message. Condolences sent on behalf of a company rather than a person. An apology with real weight behind it. A hotel, where we deliver to the property and leave the arrangement under the guest's name. And now and then a birthday where somebody has decided to be unreasonable about it, which is a perfectly good reason to be here.
Two notes worth having. Pieces built on unusual stems, orchids, out-of-season garden roses, imported peonies, are better arranged with a phone call a day or two ahead than with an order placed at a quarter to three, because those decisions get made at the market in the morning. And the terms do not change with the number on the price: if the flowers arrive and they are not fresh, we replace them or refund you.
