The stems

Eight ranunculus and ten stems of stock. The ranunculus are the visual event: hard buttons that unfold into wide, layered cups over two or three days, roughly doubling in size. The stock is the scent and the height, spires of small florets opening from the base upward, with a clove-warm perfume that carries across a room.

When they're at their best

Both are California field crops and their seasons overlap. Ranunculus runs February through May, peaking in March and April; stock runs January through May, peaking February to April. Late winter and spring is when this bouquet is at its most local, its largest and its best value.

Care

• Daily water changes, not every-other-day. Hollow ranunculus stems and thick stock stems both spoil water quickly.
• Keep it shallow; about three inches suits both.
• Recut with a sharp blade, since scissors crush a hollow stem closed.
• Cool room, out of direct sun. Warmth blows ranunculus open in a day.
