The flower

Thirty stems of stock in pink, lilac and white. Stock is the strongest-scented flower we work with: warm, clove-and-honey, the kind that announces itself from the next room. Each stem is a spire of small ruffled florets that open from the bottom up, so the column lengthens over the week and the bouquet keeps gaining height in the vase.

When it's at its best

Stock is a true California crop, harvested January through May with the peak from February to April. In those months the stems are thicker, the spires longer and the scent noticeably heavier. It is one of the few flowers where you can smell the difference between a seasonal stem and an out-of-season one.

Care

Stock fouls water faster than anything else in the shop, and the smell will warn you before the flowers wilt. Change the water every day, not every other day, and rinse the stem ends when you do. Strip all leaves below the waterline, recut an inch each time, and use four to five inches of cool water. Five to eight days is a normal run, and a cool room adds to it.
